
Bajra Atta (Pearl Millet Flour)
Chef Select Bajra Atta is whole-grain flour produced by grinding food-grade pearl millet, botanically identified as Cenchrus americanus and widely known by the synonym Pennisetum glaucum. It has a naturally greyish-beige colour, a mildly earthy and nutty flavour, and a soft flour texture. Bajra atta is traditionally used for bajray ki roti and can also be incorporated into porridge, pancakes, savoury flatbreads, baked foods and multigrain flour blends. Pearl millet is naturally gluten-free, but this product should not be represented as certified gluten-free when it is milled or packed around wheat.
