Chef Select Brown Basmati Rice is whole-grain basmati from which the inedible outer hull has been removed while the bran layer and germ remain largely intact. It has a naturally light-brown appearance, a nutty aroma, a firmer texture and a longer cooking time than polished white basmati. It is suitable for pulao, grain bowls, curries, khichdi and other meals where the texture and flavour of whole-grain rice are preferred.

When cooked correctly, the grains become soft, tender and slightly clinging while remaining distinct from true glutinous or sticky rice. Chef Select Tota Basmati consists of fragrant broken basmati grains produced during the rice-milling process. Because the pieces come from basmati rice, they retain the characteristic aroma and flavour of the parent grain while cooking more quickly than whole-grain basmati. Their exposed broken surfaces release starch readily during simmering, making this rice especially suitable for kheer, firni, khichdi, rice porridge and other soft-textured dishes.
